Mango Salsa with avocado

This recipe has been a staple of ours for years! It’s not only easy to make but it’s full of healthy ingredients and is vegetarian. It can compliment any dish or eaten as a snack with chips. We love putting this salsa on our Pheasant Fajitas (Fajitas recipe here: https://www.cedarspointkennel.com/post/blog-pheasant-fajita-recipe-by-brenda ) as well as on burritos. It’s been a favorite at Cedars Point Kennel and we hope it’s a favorite for you all as well.
Ingredients:
2 large mangoes, peeled and diced
3 garlic cloves-minced
1 small red onion-diced or ½ a large onion.
2 good sized tomatoes diced- Roma or vine tomatoes work well.
1 jalapeno pepper seeded and diced
1 avocado diced
¼ cup of chopped parsley
Juice from half a lemon
1 tablespoon of extra virgin olive oil
1 tablespoon of honey
Dash of salt and pepper to taste
Directions:
Gently toss diced mangoes, tomatoes, garlic, onion, jalapeno pepper, parsley, avocado, and lemon juice in a large bowl. Add the olive oil, honey, and salt and pepper and gently toss again. Serve with tortilla chips as an appetizer or over pheasant fajitas, halibut, or homemade burritos with quinoa and black beans.
